this year we planted two rows of spinach in the garden and it's come up beautifully and bountifully. i've been enjoying the (almost daily) spinach salads, i'm making lasagna for Father's Day, and i've got a killer
spanikopita recipe but i think i'm going to need some more ideas. we're talking spinach in Popeye proportions here. if push comes to shove i know i can freeze it but fresh spinach is a billion times better. any help by way of tried and true recipes, home remedies, arts & crafts ideas - whatever - would be greatly appreciated.

I like my spinach on homemade pizza with italian sausage, tomatoes, feta cheese, and mozzarella . If you put it on the pizza fresh, make sure that you put it under the cheese rather than on top to help hold it on the pizza. I like cooking it down too before putting it on the pizza.
Spinach also makes good pesto.

Kelly..I found a blog called pickypalate.blogspot.com She went nutso on the spinach recipes recently. I've tried the beef florentine pasta soup with basil and cream. It was delish. Its not exactly soup weather these days..but there are some other recipes there to try.

I really enjoy a fresh spinach and avocado salad with the honey mustard dressing (I apologize that I can't remember the name of the dressing) with the picture of an avocado on the front. I'm going to the store today. I'll look for it and let you know. It's simple, but it's really good. As you know, dip the avocado in a little lemon juice so it doesn't turn brown and I feel that it makes it less slimey.

I make a salad with strawberries (although ours aren't keeping time with our spinach), red onion (which aren't ready either), slivered almonds and a dressing of 4T. vinegar, 4T. sugar, 1t. salt, 1/2t. pepper, 1/4 c. olive oil (dissolve sugar in vinegar, add s&p, whisk in evoo, let cool and toss with salad). Use just enough dressing to your taste and size of salad. I'll be checking in to use some of these spinach ideas. I'm the only one who will eat it, and we have a row too.
